I'm hurting right now, but I'm doing it for YOU. Wanna know why I'm enduring agonizing pain to sit down at the computer and blog? It's because today, I discovered the BEST BANANA BREAD. EVER. And I wanted to share.
Banana bread pretty much rocks. It's pretty tough to screw it up, and even the
Go to your recipe box. Take out all evidence of any other previous Banana Bread incarnations. Burn them. Shred them. Compost them. Whatever.
Then go make this:
1 3/4 cup flour (I used whole wheat...yummy)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter
2 eggs
1 cup sugar (brown...yummy)
2 mashed bananas*
2 teaspoons vanilla
And the secret ingredient, the one that makes it oh so moist and yummy:
3/4 cup of vanilla yogurt.
I just had plain yogurt, so added a bit more vanilla instead.
Mix the whole kit and caboodle together (use one of these if you can...makes baking so much better and oh so sexy!) and stick it in the oven at 350 for 60 minutes. Add nuts, if you're a nuts-in-your-banana-bread kind of family. Or chocolate chips. Dried cranberries. Whatever you like. Make a double batch, you wont regret it.
It's seriously the best banana bread ever. Like EVER.
(Maybe y'all have been putting yogurt in your banana bread for eons, but if you have been then SHAME ON YOU for not telling me!)

After eating nearly an entire loaf of banana bread this afternoon, I'd like to say that when I make this again, I'll add one more banana. I kind of skimped on the banana - I had 3 1/2 bananas when the recipe called for 4, so maybe it was my own damn fault, but I'd like to go out on a limb here and say: add an extra banana.

The very unfair part of this is that I have to actually go through the effort of making it in order to find out if you're lying and it's actually the grosses banana bread ever. So.much.work. And, now I'm dying for a piece of banana bread but lack the work effort to make it happen. *sigh*
I forgot to say that I hope you're feeling better soon (preferably not because you drank a few bottles of wine).
Now that I'm buying organic banana at high prices - I never let them go brown anymore - hence have been baking few banana breads - sheesh!
I'll have to go buy some brown banana on the clearance rack and have a go at your yogurt recipe.
Sounds great - yogurt makes everything better. I add a generous glop to my pancake batters and it makes for really fluffy pancakes.
